OYSTER STEW
Ingredients: 3 dozen oysters (live in shell) 4 tablesoppns butter 1 quart milk 1 clove garlic finely minced salt and pepper to taste
Shuck the oysters, draining well. Make sure the juice is saved. Put one tablespoon butter in frying pan, medium heat. Put garlic in frying pan until just golden. Add oysters; cook until edges of oysters curl. Do not overcook or the oysters will be tough. Heat the oyster juice separately. Scald the milk. Add butter, oysters and juice to the scalded milk. Season to taste with salt and pepper. Let stand for a few minutes for the flavours to blend sefore serving. Enjoy. Serves 6.
