Michele’s Famous Brown Bread

Mix in a large bowl:
1T salt
2 T white sugar – or 1/3 cup maple syrup
½ cup molasses
1/3 cup oats
1/3 cup all bran cereal
1/3 cup flax seed
1/3 cup golden raisins
Glob of butter (the recipe calls for 2 T of shortening or butter)
Add to this 2 cups boiling water.
Allow to cool down a little bit, then add 1-2 cups of flour

In another cereal bowl add luke warm water (90-100 degrees)
A few drops of molasses or maple syrup
2 T of yeast
Let rise

Blend in the yeast mixture and finish adding the flour (approximately 2-3 cups).
Knead and let stand until double in size.
Knock down buy kneading and then form into loaf sizes, let rise again.

Bake for 15-20 minutes in 350 degree oven or until cooked (this depends upon the size of the loaves).

Lemon Chicken

4 Chicken Breasts, skinned and boned
1 egg
Flour
2 Tablespoons peanut oil
2.5 Tablespoons cornstarch
¼ cup lemon juice
Grated rind of 1 lemon
1/3 cup sugar
¼ tsp ginger
Rind of ½ lemon, cut into thin strips

Cut Chicken into 1-inch strips.
Beat egg with 2 T water.
Dip chicken in this, then dredge in flour
Heat oil in skillet and fry chicken, remove pieces as they are cooked
Mix remaining ingredients except strips of lemon rind.
Bring to a boil in skillet.
Add chicken and lemon rind to the mixture and heat for 5 minutes.
Serves 4

Salmon Loaf

15 oz can salmon
1 egg, beaten
½ cup cottage cheese
1 cup cracker crumbs
2-3 chopped green onions
½ cup green peas
1 T Worcestershire sauce
1 T lemon juice
½ tsp paprika
Salt and pepper
¼ cup milk

Drain salmon, remove bones and break into small pieces
Add remaining ingredients and blend well.
Pack lightly into a buttered baking dish
Bake for 30 minutes at 350 degrees.

Serves 4

3 Cups of flour
2 T olive oil
1 Cup water
1 T yeast
Salt to taste
